Meal Prep Plan + Shopping List for Next Week

Next week we’ll be trying out Something Sweet Something Savoury’s Chickpea and Potato Curry and Fun Without Fodmap’s Sheetpan Nachos.



Want to cook along with us? Here’s the grocery list for the two recipes next week:

  • 1 Clamshell of fresh spinach*

  • 3 Roma tomatoes

  • 1 Bunch of cilantro

  • 1 Bunch of green onion (optional)

  • 1 Lime

  • 2 lbs of potatoes**

  • 1 (16 oz.) Package ground protein of choice***

  • 1 (8 oz.) Bag shredded cheddar cheese

  • 1 (14 oz.) Bag of corn tortilla chips

  • 1 (2.25 oz.) Can of Black olives

  • 1 (10 oz.) Can Diced Tomatoes

  • 1 Bag dried garbanzo beans****

  • 1 (32 oz.) Tetra Pak of stock*****


Here are some spices and pantry staples you’ll need this week that you may already have:

  • Cumin

  • Paprika

  • Ground Ginger

  • Garam Masala or Curry Powder

  • Coriander

  • Cinnamon

  • Turmeric

  • Rice

  • Cooking oil (canola, sunflower, or olive oil all work)

  • Large baking sheet

  • Tin foil or parchment paper

  • Crock pot/instant pot/Dutch oven/large skillet

* This was the easiest, pre-washed option available to me for my Imperfect Foods delivery, but a bunch of fresh spinach or a bag or box of frozen spinach would be cheaper.


** Russet, white, or red potatoes will probably work best. Fingerling and baby gold potatoes will get too mushy, and sweet potatoes will throw off the flavor.


*** We’re going with ground beef, but the recipe offers ground turkey as an option as well. Ground turkey isn’t my thing, so I’d throw out impossible ground burger meat, soyrizo, textured vegetable protein, or lentils as alternatives.

**** A bag of dried garbanzo beans/chickpeas will be more cost efficient, but takes more time to prepare. Grab 2 cans of garbanzo beans to save yourself some time if you want!

***** Since we’re currently following a Low Fodmap diet we’re skipping the onion and garlic in the curry recipe, so low fodmap veggie stock will hopefully add some flavor. Vegetable stock, chicken stock, or water also work.
